What is it with me and Red Velvet lately?  I have made the Red Velvet cookies I posted a couple of weeks ago twice so far and yes, they are worth making! Trust me! I am so glad I ran across the recipe at Bakerella and was able to share with you! Thanks to all my facebook friends who said you tried them and your family loved them!

So here I am again with another red velvet recipe...seems all I do on here is recipes so far.  Any way, it is Valentine's Day in a few days and they are red.... seemed reasonable.  So add this recipe to your Valentine's Day file and let me know how they turn out!

Serve up a romantic breakfast-in-bed for your Valentine with these decadent pancakes.  Simply beautiful, and yet more pleasing to the taste-buds than even the eyes.  I know my sweetheart revels in any opportunity to feel just so pampered. How fun it is to celebrate the month of love through the delights of sweet treats.   
Red Velvet Pancakes
  • 1 1/2 C. Buttermilk
  • 4  Eggs
  • 4 Tbsp. Butter, melted
  • 1 tsp. Vanilla
  • 2 Tbsp. Red Food Coloring
  • 2 C. Flour
  • 2 Tbsp. Cocoa
  • 1/3 cup Sugar
  • 2 tsp. Baking Powder
  • 1/2 tsp. Baking Soda
  • 1 tsp. Salt
Mix together dry ingredients and set aside. Melt butter in separate bowl, then add buttermilk, eggs, vanilla, and food coloring. Blend well. Pour in dry mixture and beat until smooth.
Pour ½ cup worth of the whipped batter on a greased skillet. Pan fry on medium heat until browned. Flip over and brown again. Top with desired toppings and serve warm.
{To make a heart shaped pancake (optional) place a heart shaped cookie cutter on the skillet, and pour batter into the cookie cutter. Remove form before flipping.}
*Optional toppings include syrup, butter, whipping cream, and shaved chocolate.
Buttermilk Syrup
  • 1 C Butter
  • 1 C Buttermilk
  • 2 C Sugar
  • 2 Tbsp. Vanilla
  • 1 tsp. Baking Soda
Bring the first three ingredients to a boil and boil for one minute, stirring constantly.  Remove from heat and add vanilla and baking soda.  Stir and Serve.


Valentine's Day is just around the corner and of course everyone thinks chocolate.  It's funny...after 20+ years of marriage I rarely get chocolate anymore. Hmmm...I need to look into that.  Any way, I ran across this recipe for Mystery Mocha on one of my favorite blogs...The Pioneer Woman.  It reminds me of one my daugher's favorite desserts...Chocolate Lava.  But now we can make it at home.  She hates coffee so I might take that out, but then, I love coffee so...

Check out this recipe for Mystery Mocha...again very easy and looks delicious! Let me know if you try it.  I hope to give it a whirl this weekend for Valentine's Day...just in case I don't get a heart from of candy this year!
