Let The Good Times Roll....Gumbo!

We traveled to New Orleans this past summer.  It was a bit of a side trip on a trip to Louisiana to pick up a duck boat.  You can probably fill in the blanks on that one.  In short, not the vacation I thought we were doing.




But in an effort to make the most of this "needed" trip, we decided to check out New Orleans.  None of us had ever been and of course it seemed like the natural stop since we were so close.  It wasn't what we expected.  To be fair...it was hot, we were traveling with a 14 week old lab puppy.  Did I mention it was hot?




We found our way to the French Quarter (by way of a few pretty sketchy side streets).  I think we were all surprised that it didn't quite match what we had seen on TV and in magazines.  Maybe I was expecting the Disney version of the French Quarter.  We did a quick walking tour of the area (did I mention it was hot?) and as lunchtime approached we looked for a place to eat that would allow puppies. It is fair to say that none of the eateries with air conditioning allowed puppies.  We found the French Quarter Café and sat at a table along the sidewalk.  Wanting to experience the flavors of New Orleans we all picked something unique that we had never tried.  Gumbo was a must. 




The gumbo was good.  A little bit of everything thrown together that ended up successful. We had gyros and red beans and rice I think.  It was all good.  I imagine all of the food in New Orleans is good.  The best part of lunch was the live band that played all of the sounds of New Orleans.  A hodgepodge group of guys that came together in this little sidewalk band made some awesome music and helped us feel like we had really experienced N.O.




From that trip, we learned that we like gumbo.  Of  course it wasn't in my recipe file, but as the New Year rolled in it seemed like the perfect recipe to break in my new stockpot that I had received from our girls for Christmas.  A special recipe for a special inauguration.




I looked all over for gumbo recipes and ended up combining three different recipes.  Here is the general recipe that I used.  Turn on some zydeco music and give it a try on one of these cold winter days.






Gumbo Recipe:



Ingredients
1 cup butter, plus 1 tablespoon
3/4 cup all purpose flour
1 cup chopped yellow onion chopped
1 cup chopped celery
1 medium chopped green pepper
2 cloves garlic, minced
1 bag cut up frozen okra
3 cups of chicken stock
1 bottle (2 cups) bottled clam juice
2 can diced tomatoes with juice
3 bay leaves
1 tbs dried parsley flakes
1 tbs Cajun season
1 tsp dried thyme leaves
1 tsp dried basil leaves
1/2 tsp black pepper
2 tbs Old Bay Seasoning
1 1/2 cups cooked Andouille sausage, sliced diagonally
1 cup diced smoked ham
2 lbs shrimp, cleaned and de-veined
cooked white rice for serving




In a large heavy saucepan, over low heat, melt 1 cup of the butter.  Add the flour and cook on low heat until the roux is dark brown; about 30-45 minutes, stirring constantly. * Cook's Note: Brown does not mean burnt; if you burn the roux you have to throw it out and start over again. Friends at this point I recommend taking your tablet in the kitchen, or turning on your kitchen tv and watching one of those episodes you DVRd.  This step is painstakingly slow.


Add the onions, celery, peppers and garlic and sauté until translucent. Mix in the okra and the remaining ingredients, including the remaining tablespoon of butter and simmer over medium-low heat until thick, about 1 hour.  (I waited until about 5 minutes before serving to add the shrimp).


Before serving remove the bay leaves. Transfer to a serving bowl and serve over rice.

I think I am weird.  I think I may have some stalker tendencies.  Social media did it to me.  At least that's what I am blaming it on.  There are "friends" I have "made" through social media that I love to hear from.  I love to see their life unfolding.  I love to see their families growing.  I love it when they share their recipes with me.  Of course they have no idea who I am.  That's stalkerish right?  Well, think what you will, but I have the best girlfriends I have never met.  Edie is one of those.  Edie authors the Life In Grace blog.  It is one of the first I followed way back when I first started blogging and reading blogs.  She is such a real person.  A person that I believe could be one of my BFFs ...if she knew me.  She actually messaged with me once...I thought I had made that true friend connection. 

I hope you will read her blog and follow her on Facebook.  No...she didn't ask me to say that.  It's just what friends do.

She shared this recipe this week and I wanted to pass it along to you.  I love soup...I love tortellini...I love quick and easy.  And since the weather is actually hovering around one degrees today...soup sounds pretty darn good.  (And gives me another reason to use my fabulous new stock pot I mentioned.  I have to use it OFTEN to handle the guilt of actually owning it.)  So here's a great recipe from my friend Edie.  I hope you enjoy it!

Cheese Tortellini Soup by Edie
Ingredients
  • 2 T. olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 3 stalks celery, chopped
  • 3 cloves garlic, diced
  • 2 1/2 boxes of chicken stock (10 cups)
  • 1 bag of fresh spinach
  • 1 large bag or two small bags of cheese tortellini (our grocery store has it in the dairy section)
  • 1 28 oz can of San Marzano tomatoes (you can use another brand but these make the BEST soup)
  • 1 T. balsamic vinegar
  • 1-2 T. honey
  • salt and pepper to taste
Instructions
  1. Saute the onions, celery and carrots in olive oil for 5-7 min or until the onions are translucent.
  2. Add the diced garlic and sauté another 2-3 minutes.
  3. Add the chicken stock, tortellini, tomatoes, spinach, vinegar and honey.
  4. Bring to a boil and then reduce heat and simmer until the pasta is tender.
  5. Serve with grated parmesan cheese and crusty bread!

It's all the rage. Quinoa (KEEN wah). I have seen it on menus and on recipe sites. I think I may have eaten it once without knowing it...


I ran across this recipe recently. I admit I stopped because it was a pretty picture.  I do that. Anyway I have been seeing lots of  pins lately for quinoa recipes.  So I took another look.  Turns out it is very healthy! How 'bout that...and you can cook something pretty with it.  Healthy and pretty...hmmmm....


Anyway I printed out the recipe and thought "I'll make this sometime...of course when there are just girls around to eat it." Then when at the grocery store I didn't have the recipe with me.  It happens a lot.  So I tried to remember the ingredients.  Not usually good for me to do.  But I actually did pretty good and got it all (or had some of it) except for mangos.Oh yeah and the lime juice (I just used lemon juice instead) But  I forgot mangos.  I bet the mangos were the best part.  Oh well.

I made this recipe last night (con mangos and lime juice).  Our local grocery store had one...yes just one...type of quinoa.  It was a flavored kind....red pepper something. Anyway, as it turns out, quinoa is good.  And healthy.  And easy to cook.  


I encourage you to try this recipe if you are looking for healthy...and pretty...and easy.

Blueberry Cornbread...of course!

I ran across this recipe for Blueberry Cornbread today and just couldn't help myself...I had to share it. And I am going to HAVE to make it! I mean when have you ever seen blueberry cornbread? 


I could use local fresh ground cornmeal from Dellinger's Mill.  I can pick it up at The Market on Oak anytime!  For now I will have to use frozen blueberries, but it won't be long until we can pick local blueberries too! 


But one question I have is...what do you eat blueberry cornbread with?  Well I don't know...maybe I will just eat it by itself!:)

Okay I haven't always liked sharing recipes. Even when someone shared them with me.  There are nice people in the world....sharers.  But sometimes I feel that when I find a great recipe I should keep it to myself...like it is a treasured family heirloom recipe.  Ancient Chinese secret..ya know? But I am trying to be a better recipe sharing person. (Since I am a really bad recipe stealer) It does make me feel kinda good after I have shared a good one! 


This recipe wasn't shared with me...but it was there for the taking. (see what I mean?)  I LOVE Ree Drummond...The Pioneer Woman.  I bought her cookbook and followed her blog BEFORE she had a Food Network Show.  She is cool.  I want to be her.  This is Ree's Best Ever Lasagna recipe.


Anyway, so far I haven't tried one of her recipes that wasn't great.  Sometimes best ever. And this is one.  SO....I am being one of those better people and I'm sharing.  For the few souls who might see this post...congratulations! You win! It's your lucky day! Trust me!

Oh Dear Me...Biscuits with Chocolate Gravy!

What is more Southern than biscuits? Did you know you can't get them anywhere? Nope. Plenty of sinful places out of the southern states don't have biscuits on the menu! Some poor people in this world have never had a biscuit. (Note to self:: add them to prayer list).  My mother ALWAYS made biscuits from scratch.  I have never eaten a refrigerator- grocery store-biscuit from my mother's kitchen. I can remember watching her mix the lard (gasp), flour, & buttermilk with a worn aluminum gadget and then hand patting the biscuits.


Who knew it was so hard?


I have tried.  I guess I thought you inherit the skill. The gift. But you don't.  Well I didn't.  I am the queen of refrigerator, pop it out of a can biscuits.  Now I will say the frozen ones are pretty darn close though.


I want to be a biscuit maker. A real bon-a-fide biscuit maker. So I am going to try and this recipe seems to be the closest I can find to my mom's.  And lordy they have also included a recipe for chocolate gravy. Now that's incentive to make biscuits.

Not Yo' Mama's Banana Pudding

As promised, here is one of my favorite Paula Deen recipes. I have made it alot and encourage everyone who loves banana pudding to try it.  Warning: it is RICH! So watch your portion control, but it is oh so yummy!


Not Yo' Mama's Banana Pudding

A new twist on an old favorite.  This banana pudding is delicious and pretty too!
Servings: 12 servings
Prep Time: 30 min
Difficulty: Easy



Ingredients 

1   12-ounce container frozen whipped topping thawed, or equal amount sweetened whip
1   14-ounce can sweetened condensed milk
1   8-ounce package cream cheese, softened
2 cup milk
1   5-ounce box instant French vanilla pudding
6-8   bananas, sliced
2   bags Pepperidge Farm Chessmen cookies

Directions

Line the bottom of a 13x9x2-inch dish with 1 bag of cookies and layer bananas on top.
In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer.  Using another bowl, combine the cream cheese and condensed milk together and mix until smooth.  Fold the whipped topping into the cream cheese mixture.  Add the cream cheese mixture to the pudding mixture and stir until well blended.  Pour the mixture over the cookies and bananas and cover with the remaining cookies.  Refrigerate until ready to serve.
